Dropalia 2023 Rose Dry Wine
Rosé obtained by the method of draining the must (Saigne) after about 12 hours of residence with the skins, adopting the Provence style in terms of color. Alcoholic fermentation at a low temperature with the aim of preserving the floral aromas. After alcoholic fermentation, the complexity of the resulting wine is enhanced by stirring the lees at regular intervals for several days.
About Producer
The “Eighty Winery” was founded in 2017 by the two brothers Christos and Panagiotis Bakalis. The passion, the respect for the wine tradition of the family as well as the know-how acquired through many years of work and studies in the wine sector, led to the revival of the winery in a modern form. The installation of the winery is located at the foot of Mount Hortiatis and next to Droupalia, a tributary of the Anthemoundas River, in the location “Ogdonta” (80) of Vasilika Thessaloniki, on the same estate where the family’s first vineyard was planted in around 1933 and became a landmark for the area. The winery produces fine wines of Protected Geographical Indication (PGI), following the appropriate winemaking standards and highlighting the local varieties through the spectrum of the specificity of the area’s soils and the family’s personal involvement.
