A hard yellow cheese with a characteristic flavour that is matured for at least 3 months in order to bring out its sweet and buttery taste. It is a table cheese but is also used in cooking. It is made from fresh whole pasteurised cow’s milk. It is full-bodied and has a characteristic taste. It fills the mouth with buttery aromas, leaving a sweet aftertaste. Its mild, smooth taste allows it to be pleasantly consumed even by children. It is a pleasant accompaniment to any meal, while in cooking it enhances dishes in which it melts without losing its structure. It also goes well with fruit and jams. Finally, it enhances the tasting experience of wines ranging from rosé, Savatiano, Moschofilero, Roditis, semi-sweet cocktails to ouzo or raki.
About Producer
A family business whose roots go back to 1970 when Manolis Pittaras bought a calf for his children to drink milk. The family’s love for animals made this farm become the largest cow’s milk production unit located on an island. Starting with love and a full sense of responsibility from sowing the seeds for the production of the feed to harvesting it, feeding the animals exclusively from non-GMO feed, milking and transporting the milk to the dairy, since 2009 in Melanes of Naxos, the Pittaras Cheese Factory has been creating fine traditional products, made from fresh cow’s milk that comes exclusively from the privately owned farm.
