Fresh cheese matured with mould. Made with pasteurised goat’s milk, lactic-acid coagulation and natural kid’s rennet. Slowly drained in suitable moulds. Refined for about 6 weeks. Rind somewhat rough, with a thin layer of white penicilium. When cut, moist and unctuous paste, white in colour and without eyes. Lactic aroma (sweet cream and soft yoghurt), fruity citrus and fungal on the rind (damp earth, mushrooms). Texture between soft and semi-soft, depending on the type of refining. Unctuous in the mouth, melting, acidified lactic flavour (characteristic of this type of cheese), with fruity notes (pineapple) and sweet cream, and a final aftertaste of raw nuts (milky hazelnut).

Quesería de la Jara recovers the cheese-making tradition that has existed in this region, and we market these artisan products of which we are very proud, in our cheese factory located 7 km from the livestock farm.
We make our cheeses with strictly controlled milk, from the very morning of milking. Sanitary analyses are carried out regularly in order to preserve the maximum sanitary qualification, and to be able to work with raw milk, without artificial treatments.
The use of quality raw materials, the completely handmade production process, and the exquisite professionalism in the elaboration, allows for a variety of cheeses and other dairy products full of personality.
By allowing natural moulding on the surface of the cheeses, we achieve a unique texture, flavour and appearance.
