Xinotiro Of Naxos
A cheese that has always been made in Naxos, a cheese that every Naxian has tasted and that is made at home, in the yard, in the dairy. By drying the fresh sour cheese in moulds, salting it and taking it out of the moulds when it can stand. The Pittaras Cheese Factory started with small quantities, observing all the rules of hygiene and safety, to produce the best cheese of Naxos and beyond. It can stand alone on the table, accompanying any variety of cheeses, perfectly accompanying pasta or a piece of bread. Hard enough to break when sliced, with a tart, tart taste, it gives us in one bite an experience that will never be forgotten.
About Producer
A family business whose roots go back to 1970 when Manolis Pittaras bought a calf for his children to drink milk. The family’s love for animals made this farm become the largest cow’s milk production unit located on an island. Starting with love and a full sense of responsibility from sowing the seeds for the production of the feed to harvesting it, feeding the animals exclusively from non-GMO feed, milking and transporting the milk to the dairy, since 2009 in Melanes of Naxos, the Pittaras Cheese Factory has been creating fine traditional products, made from fresh cow’s milk that comes exclusively from the privately owned farm.
